Wednesday Accountability Report

Whew! I’m exhausted after a long workout (cardio and strength), so my post will be short and sweet.

Here’s how I did for the day:

While I’ve been a bit disappointed in my weight the last week or so, I must admit that I can see noticeable definition starting in my legs and I’ve officially maxed out the calf-press machine (400 lbs, 9 reps)!

Don’t judge the bug bite: it’s Florida, it’s summer, and mosquitos are basically eating children whole. This is minor compared to how legs, arms, and exposed body parts look mid-summer.

Last Month

Uh oh. Today is June 11th. Crap.

That means I’m officially one month away from my thirtieth birthday.

For the first few weeks of my Dirty Thirty Weight Loss Challenge, I had been very strict with my diet and exercise and the weight poured off. I went from 131 to 125 in the span of 10 days (a little fast), but have since stalled out and even gone backward a bit.

I’ve been REALLY into sweets lately and it’s showing on the scale – I’ve been stalled between 127-128 for almost two weeks. Seeing the calendar today was exactly what I needed: a swift kick in the butt and a reminder that I’m not getting any younger. It will only getting harder to lose this weight the more I postpone it, so I need to kick myself into gear and finish what I’ve started.

Starting today, I’m back on clean eating (with a small, daily cheat permitted – I am human) and a rigorous exercise program.

My goals will be to stay under 1,300 calories, stay moderately low carb, and to burn at least 5,000 calories per week through my workouts. That means intense gym visits, but I know I can do it.

The goal: under 120 by 7/11/2014.

Let’s make it happen!

Tuesday Accountability Report

My sweet tooth was in overdrive today and I definitely overindulged. Whoops!

I was at work 9-9 again so I wasn’t able to make it to the gym again (second day in a row).

I plan to hit the gym HARD tomorrow (think 2+ hours cardio AND strength training) to cancel out some of the munchies I’ve had the last 24 hours.

Monday Accountability Report

Amazingly, I’m not horribly sore today. My legs feel like lead — they are puffed up and swollen — but I’m able to walk normally despite yesterday’s intense 60+ trek.

My appetite was crazy and I barely kept myself under 1,500 calories. I have class Mondays, so the gym isn’t an option – fortunately, we had a brief field trip to the Genius Reserve (48 acre wilderness preservation in Winter Park), so I was able to squeeze in a little bit of walking into my evening.

Saturday Accountability Report

Holy CHEAT DAY, Batman!

Man, did I splurge today! I enjoyed frozen yogurt at the mall, a couple of adult beverages at Downtown Disney, and a few beverages before bed.

I must say… I enjoyed myself today. I will probably regret the calorie damage tomorrow, but I walked over 4 hours at Downtown Disney and squeezed in 90 minutes on the elliptical, so it wasn’t all bad!

Friday Accountability Report

Whoops!

I crashed early last night (I blame the wine!) and forgot to post my report.

Not horrible for a Friday night! In fact, I am positive I walked more than 45 minutes, as I walked up and down an outdoor art stroll for over an hour (and bought an awesome steampunk necklace and vintage shirt in the process)!

All in all, it was a good night!

Super Simple Paleo Breakfast Quiche

Tired of Greek yogurt every day, I decided to throw together these super simple crestless quiches for breakfast during the week.

Seriously, these took less than 5 minutes to prep and only 15 minutes to cook. They are endless customizable and store well in the fridge or freezer.

Here’s what you’ll need:

  • A cupcake/muffin pan
  • Cupcake liners (these are optional, but the clean-up is MUCH easier)
  • 12 whole eggs (or 6 whole, 8-10 whites whipped together)
  • Chopped turkey bacon, turkey sausage, or meat of your choice.
  • Assorted chopped veggies (onions, peppers, tomatoes, etc)
  • 1/2 cup low fat cheese (or, if you’re strict Paleo and don’t use dairy, Daiya-brand cheese alternative works!)

Instructions:

  • Preheat over to 350 degrees.
  • While it heats, put the cupcake liners into your cupcake pan.
  • At the bottom of the liner, add in crumbled turkey bacon or a few (small) pieces of turkey sausage. I used Jennie-O Turkey Sausage links and could only fit about 1/2 of a link into each tin.
  • If you’re mixing in veggies, make sure they are THAWED or cooked. These cook too quickly to use anything frozen. I’d recommend no more than 1 tbsp of chopped veggies unless you’re using a BIG muffin tray.
  • If you’re using WHOLE eggs, crack a single egg into each cupcake liner. If you’re using the egg white/whole egg blend, fill the tin to 3/4 full.
  • Salt & pepper to taste (I also added a 1/2 tsp of onion flakes, as well, because that’s my thing).
  • Right before you toss in the oven, sprinkle on a tiny bit of cheese/cheese alternative. I didn’t even use the full 1/2 cup I had set aside, but you can be as generous as you’d like.
  • Bake for 10-12 minutes. I checked mine a few times, as I was trying to keep my yolk soft and my whites cooked, but you can cook it a little longer (up to 16 minutes) without the egg becoming rubbery. Don’t OVERCOOK them if you plan to store them, as reheating them in the microwave could make them tough if they are already well-done.

Using whole eggs and a 1/2 turkey sausage link in each, my crustless quiches were roughly 95 calories each. Not bad! I had two for breakfast this morning and plan to enjoy them over the weekend, as well. I’ll freeze the extras for future enjoyment or a quick and easy snack.

These are great for Paleo dieters, low-carb friends, or anyone that needs a quick, protein-filled breakfast in a hurry.

Wednesday Accountability Report

I decided to forgo the weigh-in today, as I’m not in the best headspace right now and don’t want to compound it with body issues, too.

I splurged today, savoring candy with my team and enjoying a cookie (and wine!) after the gym. No regrets.

Lots of sugar! Definitely going to try to be better tomorrow. I’m working 9-9, so that should help …as long as I don’t eat any of the cupcakes I baked for my team. Whoops! They don’t have any chocolate (or sour watermelon flavoring), so that should help!

Tuesday Accountability Report

It was a good day, but a bad evening. A very bad evening.

I won’t expound here, but I will say that a bad evening translates into a good workout: when I’m upset (or angry, or stressed), I feel compelled to push myself harder than normal at the gym. I try to make the emotional pain fade by trading it for physical exhaustion.

When your muscles ache and tremble from fatigue, it’s hard to think of anything but a hot bath and a soft bed. Through exercise, my hurt is numbed.

Probably not healthy, but it’s better than my old habit: binging and purging.

With that said, my exercise tonight basically cancelled out the entirety of my day:

Fortunately for me, I ate my “planned cheat,” the gluten-free chocolate chip cookie I was salivating over in an earlier blog post, before heading to the gym. So, at least that part of my evening went well!

Tomorrow is a new day. Tomorrow will be a better day.
